Reserve the remaining citrus syrup you can use for breakfast cocktails, sweets, or to make more rounds of this cocktail.

Bikini Recipe

Makes enough for 10 guests

For the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Drink (produces 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

For the Citrus Syrup: Put all the items inside a pan, heat until it reaches a light boil, agitating to dissolve. Then, turn off the heat and leave to reach room temperature fully. Pour into a clean bottle, cap it and store chilled, it will last for around one month.

For the Premix: Mix all the spirits and syrup in a large bottle, allow it to infuse for an hour, then strain preferably using muslin, making it completely strained.

To serve: Pour 85ml from the cocktail base into your mixing glass containing ice, and agitate lightly for about 60 seconds until cold. Strain into an frosted cocktail glass or similar, decorate with a few cranberries and finish with a light spray with the mandarin essence over the top.
